Are you a self-taught baker or professional?

I am a professional baking and pastry chef, recipe developer, food photographer and content creator. I began my baking journey at the age of 5, more than 20 years go. You can read about my journey right here.

What type of oven do you use?

Currently, I am using an OTG oven with a convection setting that has heating coils at the top & bottom and a fan to distribute the air evenly. If you would like guidance on purchasing or even understanding your oven for the best baking results, you can read this post right here.

What happens to the food your bake?

All the food I bake is always consumed by friends or family members as I do not support food wastage in any manner.

Ingredient substitution guide.

Baking is first and foremost a science where each ingredient has a role of its own. The recipes I test and share with you are made with intention and work best when followed exactly like mentioned. I work very hard during recipe development and each recipe is personally tested by me till they look and taste the way I intended it to be.

However, if you do plan to reduce or replace an ingredient, it is a recipe experiment that you are completing yourself and it certainly does not mean that the original recipe is wrong or can’t be trusted. A simple change can affect the texture or flavour of the original recipe. So, in case you do substitute an ingredient and it does not work, then I highly recommend using the original recipe or continue testing it with other ingredients. However, if a substitute does work out, do leave a comment about it on the respective post so I can spread the word to help other passionate bakers like you.

Why you should bake using a weighing scale.

The recipes I develop always use the metric system for baking because that is an accurate method to use. Unlike cooking where you can add in ingredients by will and make adjustments anytime during the process, baking requires accuracy. By this I mean the exact amount of ingredient has to be used as mentioned in the recipe and it should also be used in the exact process. 

Any change in the amount of an ingredient or technique will directly affect the texture and flavour of the baked dessert. For this reason, all my recipes only mention ingredients by weight to encourage you to bake and get the best results possible. In case you do decide to use measuring cups and spoons, you can easily use an ingredient convertor of your choice. But I do not recommend this as different convertors mention different weights. It’s best to invest in a quality weighing scale to not only make the baking process easier and faster but also help you mindfully use your ingredients reducing the risk of a baking fail almost entirely.
